The Story
Atitlán is home to a strong wind current that forms as warm winds from the pacific ocean traverse the mountains and result in cold winds throughout the region. This natural phenomenon is known as Xocomil, and it is so strong that it prevents boats from navigating the lake during certain times of the day. The raw power and elegance of Xocomil influences the day-to-day of the entire region as well as the production of its world class coffee.
At San Isidro Chacaya, quality is the most valuable asset, positively influenced by the altitude, volcanic soils, different microclimates that can be found on the farms and the good agricultural practices we strictly follow. The proximity to the lake, volcanoes and mountains surrounding the farm are important factors that determine the microclimates. There is a strict ZERO-WASTE policy in all production cycles. Pulp and waste water are composted with worms to make organic fertilizer, reducing the overall amount of water used.
